Quantity Ingredient

500g Plain flour

35g Baking power

1g Salt

75g Unsalted butter

100g Caster sugar

100g (2 medium eggs) Whole eggs

165g Whole milk (full)


Sieve together the flour, salt and baking powder, twice. Rub in the butter to form breadcrumbs Mix in the sugar. Mix together the eggs and milk Add the liquid slowly, into the flour to form a dough. Make the mix smooth on the table, by kneading it until is shiny and doesn't look torn. Leave to rest on the table, clingfilmed/covered with a clean cloth for 20-30 minutes. Knock back slightly, knead for 3 minutes, you will need to form a smooth surface on the bottom of the dough. Roll out on a floured surface to about 2.5cm height. Using a plain cutter, cut out the scones, dipping the cutter into flour before each cut. I use a 6cm cutter. Turn the scone upside down onto a tray lined with baking paper. The smooth side should be on the top. Egg wash the scone, rest for 30 minutes. Egg wash a second time. Cook in the deck over at 165°C for 15 minutes, or until golden on top and lightly golden on the base (pick one up to check it). Remove from the oven and cool. Once cool, immediately store in an airtight container to prevent the scones from going dry and tasting stale. For best results, soak the raisins in apple juice overnight then strain well before using. If so, you may need to add a little more flour.
